Asparagus Frittata
Description
Who can resist the fantastic taste of spring and fresh asparagus. Frying them quickly in olive oil first gives you a head start in this recipe, but be careful not to overcook it as it will finish cooking in the mixture.

- 6 large eggs
- 1 cup grated cheddar cheese
- 1 cup cooked potato, cut into small bite-sized pieces
- 1 cup freshly chopped mixed herbs (eg parsley, basil)
- Salt and freshly ground black pepper
- 1/2 tablespoon olive oil
- 1 bunch fresh asparagus, sliced into smaller pieces
Method
- Beat eggs in a bowl. Add half the cheese, the potatoes and herbs. Season with salt and freshly ground black pepper.
- Heat the oil in a large frying pan over a high heat and fry the asparagus for 1 minute, until starting to gain colour. Turn down the heat, then add egg mixture and cook gently for 5-6 minutes, until the base is set. Preheat the grill.
- Sprinkle over remaining cheese, then place frying pan under the grill and cook the frittata for 3-5 minutes or until set and golden.
- Serve hot or cold, with salad, sauces or relish. Salt and pepper to taste.
