BBQ Grilled Mini Fritattas

Bright and colourful mini fritattas cooked on the BBQ

3 eggs
1 cup of grilled vegetables – onion, courgette, capsicum etc
4 rings of capsicum about 2.5cm thick
About 30g of grated cheese
Method
Combine the whisked eggs with the vegetables and cheese. Meanwhile heat a BBQ hot plate on low. Put the rings of Capsicum on the hot plate. Fill each ring of Capsicum with the frittata mixture. Cook for about 2mins then stir the egg mixture with a teaspoon so that the runny mixture finds its way to the hot plate. Cook for another 2 mins then flip the capsicum over. Cook for another 2 mins or until the egg mixture is set. Timings may vary. Serve with bacon and salad
