The Egg Guy’s Anytime Frittata
Description
Yummy, quick and versatile, you can create your own version of this easy recipe with any vegetable mix you prefer, use last night’s roast veg left overs, or use seasonal vegetables like asparagus when available and plentiful.

8 large eggs
1 cup grated cheese
4-6 bacon rashers, trimmed
Vegetable mix – you can use any fresh, leftovers or frozen vegetables.
1 cup peas*
½ cup diced carrots*
2 - 3 medium potatoes or kumara (precook and dice if using fresh)
Herbs – chopped fresh parsley
Salt and Pepper
*Note: You can substitute these with 1 1/2 cups of frozen vegetable mix.
Method
- Prepare fresh, left over or frozen vegetables – chopped into bite size pieces. Chop onion and bacon.
- Heat an oven proof 24 cm frying pan on medium heat. Add oil to pan. Add bacon and onion. Season with freshly ground black pepper and cook until onion is soft and clear.
- Add vegetables into pan and cook if needed, or warm through if using leftovers or frozen vegetables.
- Break eggs into a mixing bowl. Whisk with a fork until smooth and slightly frothy. Season with salt and pepper. Pre heat grill.
- Add the egg mix into the pan and stir occasionally. Cook over a medium heat until it is almost set in the centre. Add cheese and herbs.
- Remove from stove and finish under a hot grill for 3-4 minutes or until just golden.
Serve from the pan or cut into slices for serving, hot or cold with chutney and crusty bread.
