Back to Basics with Sophie GrayI’d be lost without Eggs!![]() Eggs are one of my favourite foods, as a quick and easy meal on their own, or as an ingredient in so many delicious and economical dishes. I love both the versatility and ease of cooking with eggs, as well as their nutritional benefits; they are little protein power packs that kids love. In a busy household like ours it’s good to know that nutritious meals are never more than 5 minutes in the making. As I’ve travelled throughout New Zealand presenting cooking demonstrations and workshops, I’ve discovered that many people have forgotten, or sadly, have never been taught the simple basics like how to boil an egg, how to make poached eggs or how to turn simple left over ingredients into a delicious and filling meal. So over the next month I’m going to be taking you ‘Back to Basics’ using eggs. We’ll start with the simple classics and I’ll also teach you a few easy new egg recipes that are delicious, nutritious, inexpensive and most importantly, quick and easy to prepare.
