Spicy Sausage Fritatta

Frittata is a simple savoury pancake made with eggs and vegetables. Chunky and fi lling, it’s easy, quick to prepare and a great way of using up leftovers! Serves 4.

8 eggs
4 medium potatoes, cut into 2cm cubes
2 Tbsp of oil
1 bunch spring onions or 1 brown onion, chopped
1 - 2 chorizo sausages, cut lengthways then sliced
A pinch of dried chilli fl akes
A handful of chopped fresh parsley

1. Boil potatoes in salted water until just cooked. Drain and return to element for a few seconds to dry out. Heat half the oil in a non-stick frying pan and fry the potato cubes, onions and sausage for 2 - 3 minutes, stirring frequently.
2. Whisk together eggs, chilli fl akes, salt, pepper and parsley. Add remaining oil to the pan and pour in egg mixture.
3. Reduce heat and cook gently for 5 - 10 minutes. Heat a grill. When fritatta is well set around the edges, carefully place under the grill to fi nish cooking. It should be completely set, and light golden in colour. Serve warm with salad or cold in lunch boxes.

Sophie's Tip:Try adding roasted pumpkin, chargrilled capsicum, sweetcorn, cooked spinach or a handful of cheese.
