Cook until just coats a metal spoon:
For stirred custard mixtures, the eggs are cooked just right when a thin film adheres to a metal spoon when dipped into the custard. Stirred custards should not boil. This act of coating a metal spoon is 20 to 30 degrees below boiling. The finished product should be soft and thickened but not set. Stirred custards will thicken slightly after refrigeration. Smoked Salmon Kedgeree

Serves 4

Ingredients:
1/2 cup uncooked long-grain rice
400g smoked salmon pieces drained smoked fish
4 eggs, hard boiled
1 tablespoon of butter or margarine
1 tablespoon of freshly chopped parsley or garnish

Method:
Place the rice in boiling water and simmer until cooked. Rinse and drain. Chop or flake fish as necessary. Chop the egg white and sieve the egg yolk. Melt the butter or margarine in a large saucepan. Add rice and fish. Heat until hot. Place in serving dish. Sprinkle with the chopped egg white and sieved egg yolk. Garish with fleshly chopped parsley. Serve with spicy tomato salsa or curry sauce.
