Room temperature:
Some recipes call for eggs to be used at room temperature before combining with a fat and sugar. Cold eggs can harden the fat and the batter might become curdled and effect the texture of the finished product. Remove eggs from the refrigerator about 30 minutes before using them or put them in a bowl of warm water while assembling other ingredients. Smoked Salmon Gateau

Serves 8

Ingredients:
500g cream cheese
6 eggs
1 teaspoon grated lemon rind
1 tablespoon grated onion
3 tablespoons flour
210g can salmon or tuna, drained and mashed
200g smoked salmon pieces
hard-boiled eggs for garnish
red caviar for garnish

Method:
Preheat the oven to 170ºC. In a bowl, beat the cream cheese and eggs until smooth. Add the lemon rind and onion and beat well. Then fold in the flour. Mix in the salmon or tuna, and salmon pieces. Line a ring tin with baking paper and pour the mixture into the tin. Bake for 1 - 1 1/4 hours or until set. Decorate with grated hard-boiled egg white, sieved hard-boiled egg yolk and red caviar. Serve with salad and horseradish cream.
