Room temperature:
Some recipes call for eggs to be used at room temperature before combining with a fat and sugar. Cold eggs can harden the fat and the batter might become curdled and effect the texture of the finished product. Remove eggs from the refrigerator about 30 minutes before using them or put them in a bowl of warm water while assembling other ingredients. Quiche

Serves 6-8

Ingredients:
200g ready-rolled shortcrust pastry
4 eggs
1 1/2 cups milk
pinch salt
1/4 teaspoon freshly ground black pepper
1 1/2-2 cups of filling ingredients e.g. chopped onion, spinach, sliced mushrooms, grated cheese.

Method:
Preheat oven to 200ºC. Line a 23cm diameter deep pie dish with the pastry. Partially bake on lower rack in the oven for 8 minutes. Remove from the oven and turn the temperature down to 180ºC. Lightly beat the eggs, add the milk, salt, pepper and any other desired seasonings. Spread the filling ingredients over the partially baked pastry. Pour in the egg mixture. Bake in preheated oven for 40-50 minutes. Let stand for 5-10 minutes before serving.
