Add a small amount of hot mixture to eggs/egg yolks:
When eggs or egg yolks are added all at once to a hot mixture, they may begin to coagulate too rapidly and form lumps. Stir a small amount of the hot mixture into the yolks to warm them and then stir the warmed egg yolk mixture into the remaining hot mixture. This is called tempering. View all the cooking tips >

Capsicum Tart

Serves 4-5

Ingredients:
1 tablespoon oil
1 red capsicum, deseeded and sliced
1 green capsicum, deseeded and sliced
1 large onion finely chopped
2 rashers lean bacon, finely chopped
4 eggs
1 cup tasty grated cheese

Method:
Preheat the oven to 200ºC. Heat the oil in a heavy-based pan. Sauté the red and green capsicum, onion and bacon for 4-5 minutes or until the onion is golden brown. Place in a well-greased 25cm diameter flan dish. Beat the eggs and pour over the capsicum. Sprinkle with cheese. Bake in a preheated oven for 20-25 minutes or until the mixture is set and golden brown. Serve cold, warm or hot.
