Add sugar, 1 to 2 tablespoons at a time:
When making meringues and some cakes, sugar is best slowly added to beaten egg whites. This serves to increase the stability of the foam. Sugar, however, can retard the foaming of the whites and must be added slowly so as not to decrease the volume. Beat the whites until foamy, and then slowly beat in the sugar. Ham and Egg Blinis

Serves 10

Ingredients:
200g ham
125g flour
1 teaspoon baking powder
1 egg, beaten
125ml milk
125ml water
1/2 teaspoon French mustard
1/4 teaspoon cayenne pepper
For garnish:
2 hard-boiled eggs
1 tablespoon mayonnaise
salt and freshly ground black pepper to taste
chopped chives
2-3 cherry tomatoes

Method:
Mince the ham finely. Sift the flour and baking powder in a bowl. Blend the egg, milk and water together and mix with the flour. Add ham, mustard and cayenne pepper and beat. Heat a heavy-based pan and brush lightly with oil. Drop spoonfuls of the mixture into the pan and cook until bubbles appear on the surface, turn and cook on the other side. Cool. Mash the hard-boiled eggs and add the mayonnaise and seasoning to taste. Pipe or spoon onto the top of each blini. Top with chopped chives or a slice of cherry tomato.
