Stuffed Eggs

Serves 2-3

Ingredients:
4 eggs

Method:
Place the eggs in a saucepan and cover with cold water. Bring to the boil and boil gently for 10 minutes. Tip off the water and run under cold water. Remove the shells and cut in half lengthwise. Carefully remove the yolks and place in a bowl and mash with a fork. Add 2 teaspoons butter, margarine or mayonnaise, salt and pepper and your choice of flavouring. Beat thoroughly to a smooth mixture. Pipe the filling into the whites and refrigerate until ready to use. Serve on a bed of lettuce, dill or cooked rice. Add garnish.
Flavouring options:
1. 1/2 teaspoon curry powder. Garnish with diced red capsicum.
2. 1/2 teaspoon dry mustard and 1 tablespoon freshly chopped parsley. Garnish with parsley sprigs.
3. 2 tablespoons finely diced smoked salmon. Garnish with chopped dill or chives.
4. 1 tablespoon tomato sauce. Garnish with red or black caviar.
1 tablespoon chopped fresh parsley. Garnish with sliced, stuffed green olives.
