Add a small amount of hot mixture to eggs/egg yolks:
When eggs or egg yolks are added all at once to a hot mixture, they may begin to coagulate too rapidly and form lumps. Stir a small amount of the hot mixture into the yolks to warm them and then stir the warmed egg yolk mixture into the remaining hot mixture. This is called tempering. View all the cooking tips >

Chocolate, Pear & Ginger Omelette

Serves 1

Recipe by Howard Helmer

Ingredients:
2 x Grade 6 or 7 eggs
2 Tbsp water
1 Tbsp butter, margarine or oil
2 pear halves, sliced
2 Tbsp melted dark chocolate
cup cream cheese
Tbsp chopped crystallised ginger

Method:
1. Beat eggs and water and seasoning together until blended.

2. Add the butter, margarine or oil into a hot 26cm non-stick pan.

3. Pour in the mixture which should begin to bubble and steam as the water evaporates

4. With an inverted spatula, quickly begin to tilt the pan and draw the edges of the mixture into the middle gently with the back of a spatula allowing the runny mixture to fill the hole,. Do this around the pan until the egg doesn’t flow, but is still wet on top (should take about 20 seconds). (Don’t cook it until it’s dry! The moist egg will cook when the omelette is folded).

5. Arrange the pears on top and drizzle with the melted dark chocolate. Place the cream cheese in the middle and sprinkle with the ginger.

6. Set aside the spatula and holding the pan in your right hand and a plate in your left hand, tip the pan so the omelette falls gently upside down onto the plate (left handed people use opposite hands).

7. Garnish.

By sliding the Omelette upside down on the plate any holes exposing the ingredients in the top of the omelette are now hidden on the bottom presenting ‘The perfect 40 second Omelette’.

For more than one serving add 2 eggs and 2 tablespoons of water per serving in a bowl. Beat eggs and water together until blended. Pour the mixture into the pan using one standard soup ladle full as the measure for one omelette.
