Cook until knife inserted near center comes out clean:
Baked custard mixtures are done when a metal knife inserted off center comes out clean. The very centre still may not be quite done, but the heat retained in the mixture will continue to cook it after removal from the oven. Cooking longer may result in a curdled or a weeping custard. Sudden Quiche

Serves 4-6

Recipe by Howard Helmer

Ingredients:
1 x 20cm deep dish pie shell, unbaked

Filling:
6 x Grade 6 or 7 eggs
cup grated cheese
1 cup diced cooked vegetables (peas, beans, carrots, corn)
cup diced cooked chicken
1 cup trim milk
Salt and pepper to taste
Fresh herbs for garnish

Method:
Preheat oven to 180°C.
Sprinkle cooked vegetables and chicken in to the pie shell.
In a bowl, beat together the eggs, milk and seasoning. Pour over filling.
Bake for 30-40 minutes in the preheated oven.
Let rest for 5 minutes before slicing, garnish with chopped herbs.
