Room temperature:
Some recipes call for eggs to be used at room temperature before combining with a fat and sugar. Cold eggs can harden the fat and the batter might become curdled and effect the texture of the finished product. Remove eggs from the refrigerator about 30 minutes before using them or put them in a bowl of warm water while assembling other ingredients. Potato & Herb Omelette

Serves 2

Ingredients:
6 x Whole eggs
¼ bunch of Dill
½ cup diced Cooked Potatoes
1 x lemon Flat bread (Turkish Bread)
Olive Oil
Sour Cream
Flat leaf parsley

Method:
Mix Chopped Dill and diced Potatoes and season with sea salt and cracked pepper.
In a separate bowl whisk 6 whole Eggs together with a fork until you have good volume, then fold into the Potato mixture.
Heat a large non stick fry pan and drizzle with olive oil and add potato mixture until mixture is 2/3 cooked then allow to set and cook for a couple of minutes on a low heat.
Remove from pan and cut into 4 pieces ready to serve.
Serve with toasted flat bread, with sour cream mixed with lemon juice and chopped Parsley on the side.
