Paprika Spiced Kumara Frittata – Spanish Omelette

Serves 4

Fry the onions, kumara, potatoes and green pepper in a little olive oil to get a little color and then followed with the paprika. Used smoked preferably.

Ingredients:
8 Eggs
1 ½ cups Milk
1 medium size Kumara (diced)
1 Onions (diced)
1 Cup Frozen peas
2 Peppers (green)
2 Potato (large)
3tsp Paprika
Salt and pepper

Method:

1. Fry the onions, kumara, potatoes and green pepper in a little olive oil to get a little color and then followed with the paprika. Used smoked preferably.
2. Transfer all the veg and potatoes onto a baking tray and roast for 15-20 minutes at 180 C or until the potatoes are just cooked.
3. Line another baking tray with grease proof paper and place the cooked vegetables on top.
4. Whisk the eggs with the milk and place on top of the veg and bake for approx 20 minutes in a slow oven – 160 C
5. Before serving allow to stand for 5-10 minutes so that you can slice it with ease.
6. You can serve this as the main protein of the dish and serve with salad and potatoes.
