Room temperature:
Some recipes call for eggs to be used at room temperature before combining with a fat and sugar. Cold eggs can harden the fat and the batter might become curdled and effect the texture of the finished product. Remove eggs from the refrigerator about 30 minutes before using them or put them in a bowl of warm water while assembling other ingredients. Lettuce, Pear, Blue Cheese and Walnut Salad

Serves 4

This flavorsome salad accompanies the Smoked Fish Frittata recipe.

Ingredients:
1 Buttercrunch lettuce, washed and dried
2 Thinly sliced pears
60-80g Blue Cheese, crumbled
1/2 cup Toasted walnuts
6-8 Snow peas, blanched
1/4 cup Lemon Dijon vinaigrette

Method:
Toss all ingredients in a salad bowl. Serve at once.
