Add sugar, 1 to 2 tablespoons at a time:
When making meringues and some cakes, sugar is best slowly added to beaten egg whites. This serves to increase the stability of the foam. Sugar, however, can retard the foaming of the whites and must be added slowly so as not to decrease the volume. Beat the whites until foamy, and then slowly beat in the sugar. Scrambled Eggs with Salmon

Serves 2

Valentine’s Day recipe idea

Ingredients:
1 tsp butter
4 eggs, lightly beaten
4 slices smoked salmon
2 wholegrain English muffins, split and toasted
1 heaped tbsp salmon caviar

Method:
Melt the butter in a small non-stick saucepan or frying pan. Add the eggs and cook over medium low heat for 2-3 minutes, gently turning the mixture as the egg begins to set. Turn off the heat.

Arrange smoked salmon slices onto half of each muffin, and top with the eggs. Place a spoonful of caviar on top and serve immediately.

* Note this recipe does not meet the Heart Tick Guidelines

Tips: For real decadence, add 1 tablespoons of cream when whisking the eggs. To make a heart-shape, the eggs were flattened slightly and a teaspoon of salmon is put on top as half the heart, then another teaspoon for the other half
